Unlocking the versatility of the Proluxe Dough Press

From Pizza Bases to Fresh Tortillas: the Proluxe dough press offers a versatile piece of equipment.

The Proluxe dough press offers a reliable way to produce consistent, high-quality pizza, but can also open the door to a variety of menu possibilities. It’s an efficient press for making fresh tortillas quesadillas to burritos and enchiladas too.

From Italian, Fusion or Mexican restaurants, looking to maintain authentic quality while improving efficiency, a dough press can be surprisingly versatile.

Consistency and Speed in Tortilla Preparation

Hand-pressing tortillas can be time-consuming and inconsistent, especially in a busy kitchen. A Proluxe dough press streamlines the process by applying even pressure to each dough ball, producing tortillas that are uniform in thickness and diameter.

With a simple press-and-release motion, staff can prepare tortillas in seconds. This helps restaurants maintain fast service during peak hours while ensuring every taco or quesadilla starts with a perfectly shaped tortilla.

Key benefits include:

  • Consistent tortilla size and thickness
  • Faster production compared to hand pressing
  • Improved presentation for plated dishes

For restaurants serving hundreds of tortillas a day, this level of consistency can significantly improve both kitchen workflow and product quality.

Fresh Tortillas That Elevate the Menu

Freshly pressed tortillas immediately elevate the dining experience. Customers notice the difference in texture and flavour compared to pre-packaged alternatives.

These small details reinforce authenticity and can become a selling point for customers seeking a more traditional experience.

More Than Just Tortillas: A Versatile Kitchen Tool

One of the biggest advantages of a Proluxe dough press is its versatility. While ideal for tortillas, the press can also help kitchens quickly shape a variety of other menu items.

Restaurants can use the press to prepare:

  • Tostadas – Press thin discs for frying into crispy bases
  • Quesadilla wraps – Perfectly shaped larger tortillas
  • Flatbreads for fusion dishes
  • Empanada dough rounds
  • Mini pizza bases for appetisers or bar menus

By using the same equipment for multiple dishes, kitchens can expand their offerings without adding extra machinery.

And here’s a recipe to try from Proluxe, if you already have one of their dough presses: -

INGREDIENTS
4 cups all-purpose flour
1 tsp. Salt
2 tsp. Baking powder
2 tbsp lard
1 ½ cups water

DIRECTIONS
Whisk the flour, salt, and baking powder together in a mixing bowl.
Mix in the lard with your fingers until the flour is combined and it resembles cornmeal.
Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic.
Divide the dough into equal pieces and roll each piece into a ball.
Place your pre-measured dough ball onto the centre of your dough press and pull the handle down quickly for approximately 3 seconds and then release.
Remove the tortilla and heat on a flat grill until lightly browned.
Fill with your ingredients and serve hot.
